Stuffed Jalapeño Poppers

WHAT YOU WILL NEED

  • 10 fresh jalapeño peppers, medium in size
  • 1 ½ cups shredded Yancey's Fancy™ Maple and Bacon Cheddar Cheese
  • 6 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ¼ cup finely chopped chives
  • ½ panko bread crumbs
  • ¼ tsp paprika
  • 1 ½ tbsp butter, melted
  • Optional garnish: crumbled bacon and/or chopped chives

WHAT TO DO

  1. Preheat the oven to 400ºF. Line a baking sheet with parchment paper
  2. *Cut the jalapeños in half lengthwise.  Using a small spoon, scrape out and discard the seeds and ribs from the peppers
  3. In a medium bowl, mix Yancey's Fancy™ Maple and Bacon Cheddar Cheese, cream cheese, mayonnaise, garlic powder and pepper 
  4. In a small bowl, combine panko bread crumbs, paprika and melted butter
  5. Fill each pepper half with the cheese mixture, and place on a baking sheet. Sprinkle the panko mixture evenly over the peppers
  6. Bake for 20-22 minutes or until the tops are golden. Remove from the oven and garnish with bacon and chives, if desired
  7. Allow to cool before serving



*To avoid burning your eyes, wear disposable gloves when working with jalapeňos. The oils from the peppers remain on your hands unless you choose to wear gloves or wash your hands extremely well.
