Maple Bacon Breakfast Strata

WHAT YOU WILL NEED

  • 6 slices Brioche bread, cubed (or your favorite bread)
  • 1 lb cubed ham (cooked, drained and crumbled bacon or sausage may also be used if desired) 
  • ¾ cup chopped green onion, divided
  • 2 cups shredded Yancey’s Fancy™ Maple and Bacon Cheddar Cheese
  • 6 eggs
  • 2 cups milk
  • 1 tsp kosher salt
  • ½ tsp black pepper

WHAT TO DO

  1. Lightly grease a 11X7 baking dish with cooking spray
  2. Arrange bread cubes in a single layer in the prepared baking pan. Sprinkle bacon and ½ cup green onion evenly over the bread followed by the cheese
  3. Whisk together eggs, milk, mustard, salt and pepper in a medium bowl. Pour over the bread mixture. Cover and refrigerate for at least 8 hours or overnight. Remove strata from the refrigerator and let sit at room temperature for 30 to 60 minutes before baking 
  4. Preheat the oven to 350°F
  5. Bake until a knife inserted in the center comes out clean, 50-60 minutes. Remove from the oven, sprinkle with remaining ¼ green onion, and allow to cool 5 minutes before serving.
