Summer's Best Broccoli & Cheese Salad

Move over potato salad and coleslaw, there’s  a new summer salad that’s  becoming a real rave-getter. One taste is all it takes to understand why it’s gaining in popularity. Although it’s easy to toss together, the layers of flavor offer a very complex taste that’ll easily win your taste buds over. 

What you will need:

1 head broccoli, cut into small florets

1 cup cherry tomatoes, cut in half

1/2 red onion, cut into 1/2-inch chunks

1 (6-ounce) can whole black olives, drained

8 ounces Yancey’s Fancy™ XXX-Sharp Cheddar Cheese, cut into 1/2-inch chunks

1/2 cup plain sour cream

1/2 cup mayonnaise

2 tablespoons honey

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup cooked crumbled bacon (optional)

What to do:

  1. In a large bowl, combine broccoli, tomatoes, onion, olives, and cheese.
  2. In a medium bowl, whisk together sour cream, mayonnaise, honey, garlic powder, salt, and pepper. Pour over vegetables and toss until evenly coated. Cover and chill until ready to serve. Sprinkle with bacon, if desired, just before serving.

Mr. Food Test Kitchen Tip: Want to save some time, then how about using frozen broccoli florets rather than the fresh. Just make sure they are thawed and well drained.
