Loaded Breakfast Pizza

What you'll need:

1 (13.8-ounce) package refrigerated pizza crust

8 eggs

2 tablespoons water

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons butter

2 cups sliced mushrooms

1 cup shredded Yancey’s Fancy® Sun-Dried Tomato and Bacon cheese

What to do:
  1. Preheat oven to 400 degrees F.  Coat a 10- by 15-inch rimmed baking sheet with cooking spray.
  2. Unroll pizza crust dough onto baking sheet, forming the dough on the bottom and sides of the pan. Partially bake dough 10 minutes, then remove from oven and set aside.
  3. Meanwhile, in a large bowl, combine eggs, water, salt, and pepper; mix well.  In a large skillet over medium heat, melt butter.  Add egg mixture; scramble until eggs are firm.
  4. Spoon scrambled eggs over prepared crust; top evenly with mushrooms and cheese.  Bake 8 to 10 minutes or until crust is golden and cheese is melted.  Slice and serve.
