Apple Pie Chicken Roll-Ups
The master cheese makers at Yancey’s Fancy went all out with this fall favorite. Each wedge of cheddar is studded with apples and tastes just like a classic apple pie. Then, when you enrobe it with tender chicken breasts and the cozy goodness of stuffing, this is one dish feel-good that is hard to pass up.
What you will need:
1 (7.6-ounce) wedge Yancey’s Fancy® Apple Pie Cheddar cheese
1 cup finely crushed dry herb stuffing mix
1 teaspoon ground sage
1 egg
1 tablespoon water
4 boneless, skinless chicken breasts, pounded to 1/4-inch thickness

What to do:
- Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
- Cut about 3/4 of the Apple Pie Cheddar cheese wedge into 8 strips, each about ½-inch x 2-inches; shred remaining 1/4 cheese wedge. In a shallow dish, combine stuffing and sage; mix well. In another shallow dish, beat egg and water.
- Place 2 strips of cheese on top of each chicken breast. Roll up the cheese in the chicken, tucking in sides; secure with toothpicks. Dip chicken into egg mixture, then into stuffing mixture, until evenly coated on all sides. Place on baking sheet seam side down. Lightly spray with cooking spray.
- Bake 25 minutes, sprinkle with shredded cheese, and bake 5 more minutes, or until chicken is no longer pink in center. Serve immediately.
