Yancey's Fancy® Creamy Bergenost™ Spinach and Artichoke Dip 

 

Ingredients

  • Olive Oil
  • 1 bunch scallions, finely chopped
  • 5 artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • Salad shrimp (optional)
  • 8 oz. Yancey's Fancy® Bergenost™, shredded
  • 1 cup sour cream
  • 1/2 cup mayonnaise 
  • 3/4 cup spinach, finely chopped
  • Pepper
  • 1 Bag tortilla chips


Directions

  1. Heat approximately 1 Tablespoon of Olive Oil in a pan over medium heat until oil faintly smokes

  2. Reduce heat to low, add scallions, artichoke hearts, garlic,  and shrimp (optional)
  3. Cook for 2-5 minutes

  4. Shred Yancey's Fancy® Bergenost™, shreds best when chilled

  5. Stir in sour cream, mayonnaise and Bergenost ™

  6. When cheese is almost completely melted add chopped spinach

  7. Stir until cheese is completely melted

  8. Add pepper to taste

  9. Remove from stove, pour into a serving dish

  10. Serve with your favorite tortilla chips
