Steakhouse Cheddar Ale from the Wellington Pub


Ingredients

  • 1 1/2 celery
  • 1 cup scallions
  • 3/4 cup shredded carrots
  • 1/2 tsp white pepper
  • 2 tsp dry mustard
  • 1 tsp smoked paprika
  • 1/4 cup Worcestershire
  • 1/4 cup white wine
  • 2 cups lager or ale
  • 2 quarts chicken stock
  • 1 quart heavy cream
  • 1 lb sliced steak (cooked)
  • 2 cups Yancey's Fancy shredded steakhouse onion cheese

Directions

  1. Thicken with a roux (Butter/flour)
  2. Garnish with puff pastry pieces
