Yancey's Fancy® Famous 5-10 Minute Cheese Sauce

  1. Bring 2 1/2 - 3 oz. of water to boil
  2. Crumble in approximately 1/2 lb. (8 oz.) of any Yancey's Fancy® processed natural cheddars (i.e. Buffalo Wing, Buffalo Blues, Wasabi, Smoked Gouda, etc.)
  3. Stir until smooth
  4. Lower heat to a simmer
  5. Remove from heat and serve

Yancey's Fancy® Poutine Cheesy Fries
  1. Cook 6 Servings of French Fries to manufacturer's specifications, baked or fried
  2. Heat 6 oz. of Yancey's Fancy® Cheese Curds in microwave oven in microwavable dish, covered with a paper towel, until melted. Stir occasionally
  3. Pour over finished fries
  4. Top with 8 oz. of hot beef or chicken gravy
  5. Serve

Yancey's Fancy® Omelets
  1. Pre-cook meat in microwave following manufacturer's instructions (approx. 2-3 minutes)
  2. Spray pan with cooking spray or with enough melted butter/margarine to coat surface of pan
  3. Using medium-size frying pan pre-heat on burner at medium heat
  4. Beat eggs with water until completely mixed
  5. Pour mixture into pan, along with Yancey's Fancy® cheese and meat of choice
  6. Mix ingredients in pan
  7. Turn heat down to Medium-Low and cover pan with pan lid
  8. After approx. 2 minutes flip omelet and cook for another 2 minutes.
  9. Serve and enjoy!

  1. Make Shake n' Bake batter
  2. Preheat Oil to 350 degrees
  3. Follow instructions on manufacturer's label)
  4. Pour 6-8 oz. of curds into shaker bag with breading

  6. Deep-Fry for 1 - 2 minutes or until breading is golden brown

  1. Toast your favorite bagel
  2. Place 2-3 oz. of Bergenost in the microwave for 10-15 seconds

Varied Cozy Grilled Cheddar Cheese Sandwiches
  1. Take 2 slices of your favorite bread
  2. Use any selection of Peppadew, Jalapeno/Peppadew, Fire Roasted Tomato, Horseradish, Buffalo Wing, Buffalo Blues, Wasabi, Roasted Garlic, Smoked Gouda and NY Sharp Processed Cheddar
  3. Using butter or margarine spread on the outside of the both slices of bread
  4. Place thick slice Yancey's Fancy® Cheddar between the two slices
  5. Use pre-heated medium frying pan
  6. on medium heat
  7. Place sandwich into frying pan
  8. Approx. 2-3 minutes or until bottom slice is golden brown
  9. Flip sandwich
  10. Cover pan
  11. Cook for another 2-3 minutes or until golden brown
  12. Serve

Yancey's Fancy® Chocolate Strawberry Fondue
  1. Melt 16 oz. of milk chocolate with 2-3 oz. of fresh milk in medium saucepan over low heat
  2. Stir occassionally until creamy and smooth
  3. Cut Yancey's Fancy® Strawberry Chardonnay Cheddar™ or Yancey's Fancy® Champagne Cheddar™ into small cubes
  4. Remove chocolate sauce from pan
  5. Place in serving bowl
  6. Using toothpicks dip cubes into chocolate sauce

Yancey's Fancy® Chicken Cordon Buffalo Blues
  1. Preheat oven to 350°
  2. Lightly coat chicken with bread crumbs (time saver tip: purchase pre-cooked breaded chicken to skip steps 1 - 3)
  3. Bake chicken 50-60 minutes, chicken should reach an internal temperature of 165°
  4. Top with a thin slice of ham (optional)
  5. Top with a thick slice of Yancey’s Fancy® Buffalo Blues Cheddar™
  6. Place under broiler until cheese melts (note: do not place too close to broiler or cheese will burn)
  7. Serve topped with a teaspoon of Blue Cheese Dressing on a roll

Yancey's Fancy® Cheesy Chicken Wings
  1. For 1 dozen chicken wings. Double recipe for 2 dozen wings.
  2. Bring 2½ - 3 oz. of water to a boil, reduce to simmer
  3. Crumble 8 oz. of Yancey’s Fancy® Buffalo Wing Cheddar™ into the boiling water, stir until smooth
  4. Remove from heat, sauce should thicken as it cools
  5. While the cheese sauce is cooking, deep fry your chicken wings at 350° until golden brown
  6. After your cheese sauce has started to thicken, use tongs to dip your chicken wings into the cheese sauce
  7. Enjoy your “Cheesy Chicken Wings!”
    • Note: For extra heat add cayanne pepper to the cheese sauce and stir in while simmering

Baked Yancey's Fancy® XXX-Sharp™ Mac & Cheese
  1. Boil one lb. of pasta according to package directions and drain
  2. Mix approx. 8 oz. (1 cup) of milk, ½ stick of melted butter/margarine, teaspoon of onion powder, teaspoon of garlic powder, pinch of salt and black pepper together
  3. Place thin layer of pasta in a large casserole dish
  4. Slice a thick layer of Yancey's Fancy® XXX-Sharp Cheddar™ over top of pasta
  5. Repeat steps 3 and 4 until you have used all the pasta, ending with cheese on top
  6. In the corner of the casserole dish, pour milk mixture until it covers pasta
  7. Bake at 325° for 1 ½ - 2 hours
  8. Remove from oven and top with (optional: sliced tomatoes) and another layer of medium-sliced Yancey’s Fancy® XXX-Sharp Cheddar™ and a thin layer of bread crumbs
  9. Place under broiler until cheese melts and bread crumbs turn golden brown. Careful not to place too close to the broiler or bread crumbs will burn

Yancey's Fancy® Buffalo Wing Cheddar™ Mac & Cheese
  1. Cook (boil or grill) about 1-2 lbs. of chicken breast and shred or use precooked chunks of rotisserie chicken and shred
    1. Set aside until end
  2. Boil and drain half a package of noodles (enough for 4 people) until desired firmness
    1. Set aside until end
  3. Meanwhile cut into chunks 1/2 lb. of sharp processed cheddar (Yancey's Deli Yellow Cheddar) and 1/2 lb. of either Yancey's Fancy® Buffalo Wing Cheddar™ or Yancey's Fancy® Buffalo Blue Cheese Cheddar
  4. In a big saucepan bring 6 oz. of water (or your favorite beer) to a boil
  5. Put the cheese that is chunked up in it and IMMEDIATELY start stirring and continue to stir until all chunks are melted into a sauce
  6. Remove from heat and add noodles as well as shredded chicken and mix together
  7. Enjoy!

Yancey's Fancy® Famous Spicy Buffalo Wing Cheddar™ Meatballs
  1. Crumble using your hand, about 16 oz. of Yancey’s Fancy Buffalo Wing cheddar into a slow cooker, add about 6-7 oz. of water.
  2. Turn slow cooker on high, stirring occasionally until it becomes a smooth sauce
  3. Pour in anywhere from 1 lb. to 1 ½ lbs. of pre-cooked meatballs
  4. Allow to cook until meatballs are completely cooked through, occasionally stirring throughout the process
  5. Turn heat down to low and serve
  6. Serve as an appetizer, on a hoagie or steak roast, or over your favorite pasta

  1. Bring 2½ - 3 oz. of water to a boil, reduce to simmer

  3. Remove from heat, sauce should thicken as it cools
  4. Bake your salmon (approx. 24-28 oz.) until done to your taste, and golden brown

Yancey's Fancy® Fire Roasted Tomato Cheddar™ Pasta Salad

Ingredients
  1. Combine ingredients and chill
  2. Toss and Serve
Yancey's Fancy® Buffalo Wing Cheddar™ Chowder
1 small onion, chopped
2 celery ribs, chopped
¼ cup butter
¼ cup flour
¾ cup milk
¾ cup chicken broth
2 cups cooked chicken, diced
½ cup chicken wing sauce
4 oz. Yancey’s Fancy® Buffalo Wing Cheddar™
½ teaspoon dried parsley flakes
½ teaspoon cayanne
½ teaspoon celery salt
¼ teaspoon garlic powder
1/8 teaspoon cumin
¼ teaspoon salt, adjust to taste
Crumbled blue cheese

Directions

  1. In 2 quart saucepan over medium heat sauté onions and celery in butter until softened
  2. Stir in flour
  3. Cook and stir 1-2 minutes over low heat, do not brown
  4. Slowly whisk in milk and broth
  5. Stir in chicken wing sauce and using your hand crumble in 4 oz. Yancey's Fancy® Buffalo Wing Cheddar™
  6. Add the rest of the ingredients and simmer over low heat until cheese is melted
  7. Serve topped with crumbled blue cheese and a celery stick inserted in bowl

  1. Bake French Fries according to manufacturer’s specifications, season fries with salt, pepper or any of your other favorite seasonings
  2. In a separate saucepan bring 2 1/2 - 3 oz. of water to boil
  3. Crumble in approximately 1/2 lb. (8 oz.) of any Yancey's Fancy® Buffalo Wing Cheddar™ cheese
    1. (optional: Try Yancey's Fancy Jalapeno & Peppadew, Buffalo Blues, Wasabi or Smoked Gouda)
  4. Stir until smooth
  5. Lower heat to a simmer
  6. Pour cheese sauce over fries
  7. Optional: Top with blue cheese or ranch dressing

Yancey's Fancy® Creamy Bergenost™ Spinach and Artichoke Dip
Olive Oil
1 bunch scallions, finely chopped
5 artichoke hearts, drained and chopped
2 cloves garlic, minced
Salad shrimp (optional)
8 oz. Yancey’s Fancy® Bergenost™, shredded
1 cup sour cream
½ cup mayonnaise
¾ cup spinach, finely chopped
Pepper
1 Bag tortilla chips
  1. Heat approximately 1 Tablespoon of Olive Oil in a pan over medium heat until oil faintly smokes
  2. Reduce heat to low, add scallions, artichoke hearts, garlic,  and shrimp (optional)
  3. Cook for 2-5 minutes
  4. Shred Yancey’s Fancy® Bergenost, shreds best when chilled
  5. Stir in sour cream, mayonnaise and Bergenost ™
  6. When cheese is almost completely melted add chopped spinach
  7. Stir until cheese is completely melted
  8. Add pepper to taste
  9. Remove from stove, pour into a serving dish
  10. Serve with your favorite tortilla chips

Yancey's Fancy® Antipasto Salad

INGREDIENTS
DIRECTIONS
  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain, and cool under cold water.
  2. In a large bowl, combine the pasta, salami, pepperoni, Yancey's Fancy® Cheddar, black olives, red bell pepper, green bell pepper and tomatoes. Stir in the envelope of dressing mix. Cover, and refrigerate for at least one hour.
  3. To prepare the dressing, whisk together the olive oil, balsamic vinegar, oregano, parsley, Parmesan cheese, salt and pepper. Just before serving, pour dressing over the salad, and mix well

  1. Bring 2 1/2 - 3 oz. of water to boil
  2. Crumble in approximately 1/2 lb. (8 oz.) of Yancey's Fancy® Smoked Gouda
  3. Stir until smooth

  5. Cook 1 lb. of Fettuccini following manufacturer's instructions
  6. Drain Fettuccini
