YANCEY'S FANCY TAKES HOME GOLD WITH CHASTINET

DES MOINES, IA (August 10, 2016) -- Yancey's Fancy, New York's Artisan Cheese proudly celebrates a first place victory at the 2016 American Cheese Society Competition, in the Italian Type Cheeses Grating Types category with their Chastinet, a cheese inspired by Master Cheesemaker Brian Bailey's mentor Fernand Chastinet, a Master Cheesemaker himself and a consultant to the French dairy industry.
 
Brian spent most of the Summer of 1982 learning many different skills in the art of cheesemaking. "Fernand was a bright, patient, and fun loving person and he taught me many different techniques." says Bailey, "This cheese involves many components and methodologies, some of which I learned from Fernand so I thought it appropriate to name it after him."
 
Developing a unique recipe from Blue cheese, Swiss, Asiago and others, Yancey's Bailey was able to create a cheese that starts out as buttery and transitions to a sweet nutty note that ends with a sharp bite. "It makes a great table cheese accompanied by a nice Pinot Noir or Barbera Red Wine," Bailey commented.
 
The American Cheese Society's annual competition received over 1800 entries from 260 different cheese producers, most of which reside in the United States. This is Yancey's fourth medal from the ACS competition and first Gold Medal.
