YANCEY'S FANCY ROASTED GARLIC CHEDDAR GNOCCHI

- 3/4 cup shredded Roasted Garlic Cheese
- 21/4 lb Ricotta Cheese
- 2 eggs
- 3 cups of flour
- salt and pepper to taste
- Combine all ingredients in a large mixing bowl and place into piping bag.
- Pipe out 1 inch sections into more flour to coat and set aside.
- Drop into boiling salted water and cook for 3 minutes.
- Garnish your favorite soup or toss with your favorite sauce.
